This past Friday morning, Nicole and I were up bright and early to prepare food samples for over 300 Meat and Seafood Managers from HEB stores across Texas at the San Antonio J.W. Marriott. We were hired by H & N Group to prepare samples of Wild & Line Caught Alaskan Cod from Alaskan Leader Seafoods. It was easy to agree to prepare samples of a product we like and have already been using for our clients. If you’re in Texas and shop at HEB, be sure to ask for Wild Alaska Cod from Alaskan Leader Seafoods.
The cod is caught in the Bering Sea using longline fishing practices, processed within an hour of being caught and individually quick frozen on the ship. The quality of the cod is excellent and I’m proud to prepare it for my clients.
Seafood for breakfast? These brave seafood managers were eager to try to our samples of cod. We pan sautéed the cod and served it over a fiesta lime, black bean, fire roasted tomato, corn, white wine sauce.

This was my second year working the HEB Meat & Seafood Expo for H & N Group. Many of the seafood managers who stopped by our booth told me they remembered the Shrimp Bloody Mary Shooters and Ceviche from last year’s show.
It was a nice break from our traditional personal chef services. We enjoy the flexibility we have as personal chefs and the variety of jobs that we are able to perform.
