“Monday Morning Family” 12.8.14

Each Monday morning I drop the kids off at school, zip to HEB to purchase groceries, and head to my client’s house to make 3 dinner entrees and one breakfast. I’ve been cooking for this family (which includes 3 young boys) for a year and four months.

This week’s “Monday Morning Menu”:

There’s so much talk of Facebook changing their policies in the new year and discontinuing small business status updates in followers’ feeds unless the business pays for advertising. I have been in the habit of posting menus and food pictures on my Lavish to Lite Bites Facebook page. I’ve also been pretty bad about blogging and need to increase my blogging habit, so I’m going to start sharing my menus and links to recipes on my blog to hopefully help you with your own menu planning.

Sautéed Asparagus with fresh Orange Juice

Salmon with Toasted Almond and Roasted Garlic Panko topping

Salmon topped with a mixture of fresh Orange Juice, Toasted Almond Slivers, and Roasted Garlic Panko topping. My client will pop this in the oven at 375º for about 12 minutes.

For breakfast, I made a batch of biscuits. I put the raw dough in the freezer on a sheet tray until they were frozen, and then popped them into a freezer Ziploc bag. My client can pull out the desired quantity of biscuits and bake them in the morning. This biscuit recipe is from King Arthur Flour (my flour of choice for baking). I thought maybe Christmas tree biscuits would be fun for the three young boys. I’m honestly not sure what they’ll look like once they bake, but I KNOW they’ll be flaky and delicious. I prepared Sausage Gravy to be warmed and spooned over the top of the freshly baked biscuits.

I rolled out some Southwestern Chicken Meatballs (1.5 lbs ground chicken, 1 egg, 1 diced jalapeño, 1 tsp cumin, 1 tsp chili powder, 1/2 red onion finely diced, 1/2 cup shredded Mexican cheese, salt and pepper) and baked them on a foil-lined pan in a 425º oven for about 12 minutes. The meatballs will be served with a warm black bean, corn, red bell pepper, jalapeño, cilantro salsa with fresh lemon juice.
